Minty Pea Dip
16 oz frozen peas
1 clove garlic
2 tbsp tahini
1/4 cup packed mint leaves
1/2 tsp salt
Blanch peas in boiling water for 1 min. Drain. (Optional- but keeps it nice and tender)
Combine ingredients in blender. Blend until reaches desired consistency.
Top with lemon zest.
